For 16 years now, the Modern Bakery in Moscow is the most important exhibition for the baking industry in Russia and the former CIS states. The exhibited COMPACT ROLL PLANT is suitable for the extremely efficient production of round, long moulded and flattened products like Hamburger buns, finger rolls, baguettes etc. even in multi shift operation and gentlest dough treatment. Its high quality components and suitability for different types of dough such as wheat, rye, multicereal and sweet yeast raised dough make it the ideal system for demanding bakers. In accordance with BACKTECH’s flexibility in construction this roll plant can be personalized and custom-made to each baker’s requirements. In case the baker wants to increase the product variety the roll plant can be extended with further system units such as a proofing and forming station, seeding station, cutting station etc. at any time. Through extremely gentle dough processing the integrated MEGA-STAR, with the proven BACKTECH TSA system, meets all demands quality-conscious bakers require from a fully automatic dough dividing and moulding machine. Moulding speed and weight is electronically adjustable and easy as well as fast cleaning increases productivity and minimizes downtime. Superb long moulding results are achieved through the long moulding device where speed and direction is adjustable. The panning station MONO-STAR, where not only the distance between the dough pieces is adjustable but also different panning patterns can be saved within the control unit, represents the perfect finishing. This allows easy and quick switching between different products. Consistent and smooth panning of the dough pieces is achieved with the retracting belt. Modern control technology, precise weighing and gentlest dough treatment allow that only one man runs the production line.
